Unlike ceylon cinnamon, these cinnamon sticks are harvested from outer tree bark, which is then dried in quills and they produce a much more rigid texture and darker color than the ceylon sticks. With this being sold by weight you will get approximately seven 2-3/4″ cinnamon sticks per ounce.
